Carrot cupcake with cheese frosting

I used a very simple recipe from my mother's recipes collection. Actually she always made this cake for us when we're small..

Ingredients:
5 eggs
1 ½ cups caster sugar

1 ½ cups butter
3 cups flour
1 teaspoon baking powder
½ teaspoon sodium bicarbonate
1 - 2 finely grated carrots

Method:
Mix well flour with sodium bicarbonate and baking powder then put aside. Beat butter & sugar till creamed. Beat in egg one by one. Mix in grated carrot, and flour gradually till all the ingredients combine completely.  Scoop the batter half to ¾ parts into papercups. Bake in preheated oven at 180˚C for 20-25 minutes.

You can also spread the cakes with cheese frosting when they're completely cool.

Cheese Frosting:
250g cream cheese
50g butter
6 tablespoon of icing sugar (or even more if you like 'em sweeter)
beat all the ingredients till smooth & spread on top of the cake..
